1/2 lb bacon, diced
10 oz frozen cauli-rice
2 cups cooked chicken
1 cup shredded mozzarella
4 eggs
1/2 cup Happy Hour So Cheesy garlic parmesan dressing (Walmart)**
1/2 cup heavy cream
salt & pepper
1/2 cup shredded colby jack
1. Put bacon in skillet and cook until crisp (don't drain grease). Add cauli-rice and saute until tender. Mix in chicken and remove from heat. Slowly add mozzarella until combined. Dump into a greased 9x9 dish
2. Whisk together eggs, cream, garlic parmesan dressing, and S&P. Pour over chicken mixture in pan
3. Top with colby jack. Bake covered at 350° for 25 minutes. Remove cover and broil an additional 5 minutes
